As ST, with proper card advantage, one option is to bounce it back after the pass with Milva, who is in kinda every ST deck. As a second, more exotic option, Geralt igni will do the job.
You will encounter them if you play long enough, but will you be able to counter them when you do? 
I haven't had any issues with them recently, but about a month ago I was running Villentretenmerth in my deck as a finishing card. Play it when you have 2 cards left in your hand in the last round and assuming you haven't lost card advantage (left them with a medic in their hand) it is pretty hard to lose. In combo with Aeromancy they don't have much of a chance. Gigni would be the more meta choice right now.
As Lim3zer0 said, you want to wound, but not destroy them. Destruction only works when they are out of medics.
