Money in this game is practically pointless with the exception of pointlessly collecting all of the cars in the game so it never really bothered me, or at least it bothered me more that there's nothing really to spend the money on rather than the little money you get.
But I guess it kind of makes sense, in Night City there is massive poverty and there are many people taking contracts from fixers and living from job to job, all wanting to be rich and famous like Morgan Blackhand and the like. In fact it is one of the main motivations of V, whether you want the character to be that way or not.

we spend big money regular people couldn't afford. V is actually pretty well off by the end, makes more than corpo middle management anyhow.

I guess most gigs would fall within that.
