Is there a manual? I cant figure out how to turn collision on for objects.

maybe I will just have to wait for more video tutorials? I spent an hour trying to figure this out.

Make sure you made them as static meshes and not just meshes.
You can still change it though by right clicking on the object and then clicking on the "convert meshes to static meshes".
And then remember to recreate the navmesh.
 
What about for vegetation meshes? I've painted some toadstools and trees onto my terrain, but the "enableCollision: true" parameter doesn't seem to work. I've recreated the navmesh (Select All > Collect Geometry > Generate navmesh > Filter mesh) but Geralt still walks through them.

With vegetation you probably want to define a no go area. The tutorial is online on youtube. It show an example how to. At about 40 seconds in the movie.
