That would have been my expectation as well, but with my own testing it seems any kill with a throwing weapon falls under the umbrella of Headhunter. Which does make sense given the actual wording: 'Neutralizing enemies with throwable weapons.' This would imply it doesn't matter how said weapon...

So the Iconic Militech Berserk makes you invulnerable to damage but also increases your damage while low health. This seems contradictory. I suppose you could wait 'til you're low health and then activate it but still.
