You can brew swallow potions at that stage of the game. You need the herb book and the gatherer skill. Then you'll be able to harvest the herbs around the villiage instead of just seeing "Unknown herb".

I defeated the weak fighter and Fat Fred, but I can't defeat any of the others. They get to 50% health and I can no longer attack them. I can click with the fist icon, but nothing happens. Is that normal or is it a bug? I've tried about 4 times now.

Get the plant gatherer skill. It's under intelligence IIRC. Then get the book of plants and read it, then you'll be able to gather the plants all over the villiage.
