Every since I bought the game I can not do any damage.
I tried to reinstall after I looked for problems and deleted all my mods but even then I deal 0 damage.
It always says Geralts makes/deals 0 damage on the left side. So I can not beat the ghouls at the start and I cheated a bit to move forward to see if it applies to the rest of the game aswell but even in the fist fight infront of the tavern I do 0 damage.

I hope anyone has an idea.

From the sound of it, there are some leftover modifications still in the game. Or, there is conflicting reference data in your save-state.

Once you install mods, it's not always possible to remove them. The only way to do so without issues may be to uninstall the mods, then restore to a saved game before you first installed them. Once the game has been saved with mods running, the reference data will be a permanent part of that save file forevermore. There's no practical way to edit/remove it.

For now, the first step would be to manually ensure that all mod files are removed and deleted (or stored in a new directory path). Then, run a verify/repair through GOG / Steam / Origin. Lastly, back up your saves, empty the ...\Documents\The Witcher 3\gamesaves... folder, and begin a brand new game.

If the problem continues even then, you likely have only two options:

1.) Uninstall and reinstall the game to a new directory path -- not the same one that you used before. That should ensure the game is vanilla once again. (You'll now be able to begin a new game.)

2.) Reinstall exactly the same mod setup you were using previously and continue on.

Either way, I'm not sure you'll be able to remove the mods from your current playthrough. We can ask, though.

Moving this to Mod Discussions. Can you make a list of the mods you were using? Someone there may know what happened and have a workaround.

Your welcome. Does that mean you managed to solve it? If so, how?

I had an old mod still in the files which I needed to delete manually. But if I try to install another new mod then again Geralt deals 0 damage. At least the main game works now. However, it is still sad.

It sounds like that you need to uninstall and reinstall the game. Only this time, after uninstalling the game, you are going to have to delete everything left over in the game folder that's still there after uninstalling the game. Then you'll have to start a new game. If you try to start from a save, the problem that you had could still happen, or the game may not start because what mods you had running are no longer installed.

This is my best idea to fix the issue.
