First question.

We know that you can play as Ciri and that after the game ends you can continue playing, will it be possible to continue playing as Ciri after the story as well? perhaps add in a character swap system like GTA5 where both Geralt and Ciri live there live and we just jump in and play as them when we feel like it. or perhaps because the two have spent so many year apart after the story let them travel together from that point on. rekindle that father daughter bond.

2nd Question. something that really bothered me about Witcher 2 was that dialogue conversations advanced before I was ready to make a choose. will it be the same in the Witcher 3, or could we maybe get an option to turn that off for the slower readers out there please.
 
1) Very unlikely that you'll be Ciri. Given she doesn't have an inventory in the vanilla game, I doubt she will be post end-game material. Playing as Ciri has been suggested many times in the DLC/Expansion Pack suggestion thread. I don't know if they will implement any of those ideas.

2) If you're talking about NPCs talking too quickly, it might be possible to pause the game. If you're talking about the decisions that have a time limit, I don't know. The purpose of those is to make a decision on the fly, I don't see CDPR implementing an option for that specifically. I can't say whether you can pause during them, either. There are somethings we won't know until May 19th, unfortunately.

Personally, i would be very happy for Ciri to become the next protagonist in the Witcher games.
 
1. You don't really "play" as Ciri as far as we know. You will sometimes take control over Ciri during some "flashbacks" but i don't think you can quest with Ciri, Level up Ciri and so on. So it wouldn't make sense to be able to play as ciri after the main storyline.

2. In W3, there are some quests where you have to decide quickly (the werewolf quest shown in Gronkhs 2nd video), don't think you can turn that off.

One issue with playing as Ciri (after the main quest for example) would be dialogue and voice-acting. They would have to record all those lines Geralt could use for Ciri as well. But in addition to that they would have to rerecord any comments NPCs make about or to Geralt that references his gender, status as a Witcher or other distintive features to refer to Ciri's gender and description, etc. Further, many interactions with NPCs might play out differently and would need to be re scripted as well as rerecorded - just for the obvious, the way a scene plays out after one or the other enters a brothel or meets Triss/Yen might go a bit differently...

Do you think they might be setting it up with the introduction of Ciri as a playable character in The Witcher Wild Hunt?

Geralt's last adventure after which he retires... and Ciri takes up the mantle for the next game.

For me, that is quite plausible that they wanted to introduce us to her as a means of continuing the Witcher saga WITHOUT Geralt at the fore front.
