While i agree with this, the Witcher 3 isn´t designed like Skyrim, meaning it´s not a sandbox you can hang out forever. Despite it´s open world element, it´s still more story driven with a clear narrative. For me the game was done after i finished all quests.

Having said that, i might add that after i was done i felt like i just broke up a relationship, i was terrible sad lol The last time i felt like this was when i was done with the Baldurs Gate saga. That moment you realize "it´s over....and i don´t want it to be over". Though, it was easier with BG because i think it wrapped it up better *shakes fist at CDPR, a better romance end damnit!* :p kidding...a litte bit ;)

I mean, I've heard that once you complete the final mission and the credits roll out, you load to a save file right before you start the final mission, don't know if that it's true

That is a suggestion that was made earlier, but it was not implemented. The game does give the explanation when the post-ending gameplay begins that the world is in the state it was before the final battle (so, in terms of the story, it is actually not post-ending, the epilogue will only happen later), but it just removes the main NPCs and fails any remaining quests related to them. However, a real post-ending world state would not be easy to implement if it was to take into account all the choices, not to mention Geralt can potentially be dead in one of the endings.

I think it would not be unreasonable to have at least some of main characters still in the game, after the ending. And still be true to it.

For example: you chose to romance Triss and go to Kovir with her? You could meet her at some place while she's packing. Have a short conversation where she tells you how happy she is or complains about some journey-related chores. If you did not romance her, she'd still be there, just somewhat quiet and sadder.

Similar with Yennefer, she could be staying at some inn and nagging you to hurry up and finish your stuff, so both of you can depart. She could keep telling you how she's had enough of politics, kings and stuff :)

Ciri could be staying at some Nilfgaardian camp, preparing to leave for south (if she's to become an empress). Or you could just randomly encounter her fighting monsters, if she decided to become a witcheress.

It would be cool if you could see Lambert and Keira travelling together from time to time.

Well, at least Dandelion is still there, looking after his broth.., I mean, cabaret ;)
