I know right!? Instead we got... a black screen.

Maybe they were afraid people would just keep on meditating in the game just for the sake of it and eventually forget about what they actually were supposed to be doing.

Hey sorry I'm still listening to the entire OST for the first time after I finished pre-loading the game, couldn't figure out which one was it.

I don't know how they made the video, but I'd guess it's be just Geralt standing a place (logically where nothing game wise can occur when stationary) for a in-game day's time and they speeded up the video. That's what happens when you meditate too, just the game is paused so the above movements aren't caught in real tine when you meditate.
