Can you play on after completing the main storyline?

I plan to focus mainly on the story and not do too many side quests as I want to explore the world in my own time, and I feel doing too much exploration and side quests, when the main story has a sense of urgency about it, detracts from the experience.

Will this be possible?

Yes you can, finish all side quests, monster hunts etc after finishing the main quest.
