You don't double click on such items, you know it, right? You just pick the ring and drag it to the slot you want. Be sure that you put it exactly on the slot. Don't try to use inventory items when you have your sword out. This works only with potions, bombs and oils. Otherwise you must seath your weapon and use the item you want (ring, armor, book).I hope you won't have problems.
