I would like any vehicle/truck that can ram through those burning cars in the middle of the road in Pacifica, or are those cars non-moveable and just a 'wall'?

A four wheeled vehicles that will transport V from point A to point B safely and with relative ease.

There probably isn't a car that is so quintessentially 80s cyberpunk as the Countach.
That said, I think Jackies Quadra has taken quite a lot of inspiration from both it and Ferrari Testarossa (made famous by Miami Vice).
Anything resembles Lamborghini Countach with existing cyberpunk'd references ^^
