So far my only gripe is the HUD, I can understand their purpose for a big screen for the console versions, but please make them smaller or let us have the option to resize them on the PC version, I watched the 3 gigabyte version of the gameplay and I have to be honest, the HUD annoyed me a bit.

No, we don't. Some things are just obvious. You don't have to specifically look for them. They are apparent because they are different than reality and therefore break immersion (even if the effect is kind of small). And threads like that are not about "finding failures for the sake of finding failures" or we don't post because we hate the game or CDPR (quite the opposite is true), we post these things because we want the best game possible and therefore we give feedback. You might not understand that, that's up to you. You maybe don't care and that's totally ok. You are right that I don't understand, I find that level of nitpicking excessive and not at all constructive.
