Contract quest doesn't advance to the next step. Blocks progress

I'm doing a contract called "The Creature from Oxenfurt Forest" wich tells me to talk to a mercenary, "Hans" about the contract. I've already talked with him and explained me everything but the quest doesn't advance, it still tells me to talk to this mercenary. If I talk again with him there's no dialogue anymore, just ask me if I found out anything about the quest.

Is there any way to fix this?? I've tried to go to the next step (seeing a video on YouTube) but the game doesn't let me examine the proofs because the quest is not really active at that point

I appreciate any help, I think this quest also have an achievement so I'm a bit concerned :(

I'm playing on an updated Xbox One with a retail Spanish disk and I do not have any older backup and I've played 89 hours by now so start again is not an option :S

I hope you can help me... I TOTALLY love this game

Thank you so much

PD: I've tried to attach a photo but I was not able to... (it just a 136k JPG but the upload button just ignored me)
PD2: Please excuse my English, I'm Spanish and still learning how to improve.

Happened to me too.
Let me guess, after the cheese mage quest you went to explore around his forest and found the griffon's nest, bust since it was level 35 you decided you'll come back later.
Then, much later, you went to talk to Hans, but the quest doesn't advance.
The only way to fix it, is simply go back where the griffon is (near the Emmentaller tower), and kill it, since you already advanced the quest on accident.

Hmmmm I don't really remember If that was my case but this is totally possible, I love to explore by myself and if I found any near impossible creature I just run to evade the situation so It may be totally possible that I've seen this griffon before.

I will try to find out were is his nest and try your suggestion.

Thank you so much Stormrage

You're welcome, just check a video walkthrough of this quest and follow the same path.
