Side activities need to make sense, wood cutting and mining take way too much work for almost no gain, you could just buy some from merchants or get a TON of more orens by actually being a wticher.
Horse racing you assume its some kind of pointless side activity, however, I bet horse racing can be pretty important in the lands of Novigrad where all the nobles live and constantly make high bets, whether of money, possessions or favors. Also a horse race takes little time and effort compared what you mentioned.

yep, what's the point in side activities if their like working? If there's anything like that there needs to be something else going on like a dialog with an NPC or even a monolog.
Yeah but I didn't mean working like its a pain in the ass or something like that, I meant that for how little use Geralt will probably have of those materials, and how you can probably win more money doing other things, its seems a bit out of place. Lore wise and gameplay mechanics wise.
