Besides the Wild Hunt attack on Novigard and the search for the Wild Hunt generals there's nothing about infiltrating the red riders.
Could be an early concept but I had hoped to see some dialogue.

Also Emhyr going mad because he lost the war? I guess going mad is the new cool thing to do.

These are all the unique Eredin lines I have found in the game, actually 34 of them. Some of these may be in unused content, though, and others could be missing.
Eredin: Aaaaaaarrrrrrrgh!
Eredin: Any last words?
Eredin: As you expire.
Eredin: Avallac'h has tricked us both.
Eredin: Bloede dh'oine…
Eredin: {Esai isse. } [They're here already.]
Eredin: Ess'tedd, esse creasa.
Eredin: Geralt, have some dignity. You know how this will end.
Eredin: Go on. Show me your spins, pirouettes and feints. I want to watch.
Eredin: Hahahaha… As you will.
Eredin: He set us against each other… and he's made off with Cirilla.
Eredin: I'd planned to kill Zireael quickly, painlessly… But now… I shall not deny myself the pleasure.
Eredin: Imlerith!
Eredin: It is unavoidable.
Eredin: I've long awaited this, and you, White Wolf.
Eredin: I've something to tell you. But I'll do so afterwards.
Eredin: No. I'm enjoying this. You are my toy.
Eredin: Nothing simpler.
Eredin: Out of my way, old man… And I shall spare your life.
Eredin: Pathetic… simply pathetic.
Eredin: Resistance is futile.
Eredin: She'll not abandon you.
Eredin: {Tabha'ar doin'ne. Ni linn yih'amar. } [Tend to them. We've no time to lose.]
Eredin: The king is dead. Long live the king.
Eredin: They trained you well at Kaer Morhen.
Eredin: This is the end, Geralt.
Eredin: Ugh, she will still be mine.
Eredin: Well, well… When cornered, you can bite.
Eredin: Witcher. I was hoping you'd come.
Eredin: You had your chance.
Eredin: You humans are so… impractical.
Eredin: You shall die, worm.
Eredin: You shan't escape me this time!
Eredin: You would die an honorable death, is that it? You will be disappointed.

Edit: for comparison, these are his lines from Witcher 1:
kngh_1203_5635: You tried cheating destiny. You took an oath, remember?
kngh_1203_6262: You cannot stop this, witcher. Death follows you!
kngh_1203_8018: Salamandra means nothing. It was but a particle of chaos, the tool of the madman you just slew.
kngh_1203_8019: Your past, your destiny, the reasons for your resurrection… All remain unknown.
kngh_1203_8020: From now on, the soul of Jacques de Aldersberg, whom you knew under another name, belongs to me.
kngh_1203_8022: I cannot be killed. You can delay your end, but it will come… Let us tend to the one already dead.
kngh_1203_8023: You've always used them ably to mask uncertainty and fear. I once promised I would follow you.
kngh_1203_8024: I come for the soul of the man you killed…
kngh_1203_8025: Let me remind you: "There is death, but there is also choice. I shall not look back. I shall find Salamandra and fulfill my destiny!"
kngh_1203_8026: You were wrong. I come for the soul of someone whose path often crossed yours, as it was written. You may fight me, but the end will always be the same-- death.
kngh_1203_8027: We meet again, Wolf. Have you fulfilled your destiny?
kngh_1203_8028: You've always used them ably to mask uncertainty and fear. I once promised I would follow you.
kngh_1203_8029: I'm here to collect on that promise!
kngh_1203_9030: You dare to oppose me? I sense your weakness as your life seeps from your wounds. With every drop, death draws nearer. You stand no chance against me.
kngh_1203_9031: You aim to kill him anyway.
kngh_1203_9032: Yield to me…
kngh_1203_9033: Do your duty.
kngh_1203_9034: You want to fight me? So be it. Your flight from death ends here. Draw your sword.
kngh_1203_9035: Do not fight it. Give up to me yet another man you destroyed.
kngh_1203_9036: You passed through Vizima like a sword through a heart, accusing others, destroying lives, mindful of nothing but your own purpose, to be achieved whatever the means.
kngh_1203_9037: Reflect on your deeds, witcher.
kngh_1203_9038: You threw gold to the Scoia'tael, feuling new massacres.
kngh_1203_9039: You brought death upon Raymond, endangered Shani mindful only of your goals. Chaos followed in your wake.
kngh_1203_9040: You helped create the foundations for the Order's fanatical reign.
kngh_1203_9041: The Order, to which you handed power, aims to eradicate all who are not entirely human. What say you to that, mutant?
kngh_1203_9042: Do not deny it, witcher. You are my greatest champion, a perfect means of destruction. Wherever you walk, death and chaos follow.
kngh_1203_9043: I stood near you when you arrived at Kaer Morhen, an omen of its downfall.
kngh_1203_9044: Vizima blazes, the Order and the Scoia'tael bleed Temeria. Does your neutrality not taste bitter?
kngh_1203_9045: Every one of your decisions brought further devastation, each choice you made led to greater evil.
kngh_1203_9046: You slaughtered dozens with your witcher's sword.
kngh_1203_9047: I observed as you judged the villagers of the Outskirts, leaving only blood and fire behind you.
kngh_1203_9048: Now, as it was years ago... Accept it.
kngh_1203_9049: How did you feel when your elven friends set fire to Vizima and slaughtered dh'oine?
kngh_1203_9050: You left Vizima in chaos only to bring destruction upon Murky Waters.
kngh_44_1: Destiny is a double-edged sword. You are one edge; the other is…
kngh_44_577: Aen'drean, va, Saov Leo, tuv'le!!!
kngh_44_587: Hahaha! You doubt destiny?
kngh_44_779: Remember me?
kngh_44_826: I shall ever be on your trail.
kngh_44_827: You will give me what you already have but do not expect. Does that sound familiar?
kngh_44_828: Do you not believe a child marked by destiny will pass through the witcher's trials?
kngh_44_829: You have given me your word. I shall stalk you, but your time has not yet come.
kngh_44_830: I'll follow you, waiting for mistakes.
kngh_44_831: If destiny holds no sway, repeat my statement.
kngh_44_832: If I didn't know, I'd think you speak boldly to mask fear.
kngh_44_833: I'll be waiting, Wolf!
kngh_44_834: We'll meet again.
kngh_44_835: My task is to see Destiny fulfilled.
kngh_44_836: We will meet again, White Wolf.
kngh_44_837: So, know, witcher, that in the future you will surrender unto me the soul of a dear one. It is written. A person both dear and distant, a traveler beyond time.
kngh_44_95: I do still, though "chase" isn't the word...

Nothing worth seeing these lines.
I'm sorry to say that who wrote those dialogues did a really poor work.

Where these quotes come from? Excluding final battle, Wandering in the Dark quest and Kaer Morhen battle? I mean:
Eredin: You would die an honorable death, is that it? You will be disappointed.

Because i never seen these quotes before o_O

You know what the enhanced edition needs? Some fodder for the good guys during the battle of Kaer Morhen! Because as it is now the Wild Hunt gets suuuuuuper REKT!

That section of the story is meant to leave us feeling defeated and in despair about how dangerous the Wild Hunt is, and Vesemir's death sort of makes that work, until your realize that he was the only victim on your side and it took the combined efforts of two of the Wild Hunt's generals to overpower him. They couldn't even call it a pyrrhic victory as they failed in their goal and lost dozens of soldiers even though they outnumbered their opponent by a huge amount.

Of course I'm not saying that I think more of our beloved heroes should die, that's why we need some fodder, which Emhyr so kindly offered Geralt, but the offer was turned down automatically.

I'm thinking it could make for some interesting new dialogue if Morvran Voorhis led a sizable force of Nilfgaardians to assist in the battle, maybe he would awkwardly try to make an impression on the potential future empress? New dialogue for Eredin should also be possible to fit in in a scenario like this.

This would probably require a lot of work to put in, like maybe a brief cutscene showing a line of Nilfgaardians fight against the Wild Hunt's soldiers, add in some more skirmishes outside of the fortress, which would be an ideal context for some dialogue from Eredin. I'm basically imagining the background battle of Nilfgaardians VS Wild Hunt to be done kind of like the wraith battle in TW2.

Then once you fall back to the fortress it could for the most part work just like the vanilla game, but now you would really feel like you were forced into a desperate last stand because the majority of your forces (Nilfgaardian fodder) were wiped out.

Not sure if this fits in this thread, but the basic gist of it is that Eredin is a disappointing villain who doesn't live up to his frightening appearance in the slightest, and I think his complete and utter defeat at Kaer Morhen is a big part of that, along with his lack of interesting dialogue.

I assume that was something just glossed over due to time constraints as it really did seem like something that should of been, I am guessing there was probably going to be choice thing there and Voorhis would have a small unit in the battle or at the very least a cutscene where his men kill off a load of Huntsmen. I agree it would of added a bit more meat to the battle if we saw Nilfgaardian soldiers being butchered all over.

So that's the real problem then. ;)
Not what he says, but what he does and how he is presented to us.

No, the latter exacerbates the problems caused by the former. He's a pantomime villain with no script and terrible acting, who is further undermined by the ending not being about his defeat. One of the problems with The Witcher 3's main plot is it doesn't fit well in to an open world setting. At no point do you ever feel under a time constraint to find Ciri before Eredin does, which in itself creates problems for Eredin as a character, i.e. his presence never holds any true threat.

HoS has completely altered my perception of Wild Hunt. I no longer even consider Eredin to be the main antagonist. A certain bald man with a penchant for sticking spoons in people's eye sockets has assume that role.
