In no particular order:

Far Cry 3
Deus Ex (The first one.)
Quake II
The Legend of Zelda: Twilight Princess
The Elder Scrolls series (Although Skyrim needed a ton of mods to make it one of my favorites.)
Mass Effect

It's difficult to compile a list like this because there are different types of games, I'd have to sort them in categories.

Top 4:

Fire Emblem: Radiant Dawn
Planescape: Torment
Majora's Mask
Chrono Trigger

All four are games that are as much experienced as played, and they're all great for different reasons. Radiant Dawn is a game so deep and complex gameplay-wise that you can become lost for hours and find yourself thinking about detailed strategies for approaching maps in your spare time. Torment is brilliant in terms of the dialogue and the little stories you find that flesh out the world (trading stories with Yves the Tale-Chaser is my absolute favorite part of the game). Majora's Mask has "heart" in spades, which isn't really something that can be explained any further than "that indescribable magic that led a lot of us to love games in the first place." Chrono Trigger creates memorable characters who you actually end up caring about, has impeccable pacing, and the soundtrack—despite the limitations of the system—not only captures the mood of each scene, but actually enhances it.

These are my absolute favorites, games I can replay over and over and over again.
It's hard to make the absolute favorites with the exception of Super Metroid and Way of the Samurai 2.

Honorable Mentions goes to;
Aliens vs Predator -series (Arcade, Atari Jaguar, PC, Super Nintendo~)
Deux Ex ("Paul I.... I..... I thought you were a GEP Gun!")
Doom, Heretic, HeXen
Fallout 1 & 2
Megaman -series as a whole
Metroid II Return of Samus - The only game in the entire series that actually focuses on it's namesake.
Metroid Fusion - Feels exactly like Metroid II just about.
Postal 2 - Let's call it a lifesaver.
Unreal Tournament - The first.

Shinning Force III. (One of my fav storylines by far).
MGS for PSX.
RE2.
DoD (enjoyed playing with people).
DCUO (still playing it, though I hardly have time. Love the idea of "playing with friends").

I am a HUGE fan of the Gran Turismo series. I bought a PS3 specifically for Gran Turismo 5.

I like racing games in general, both leaning towards sim, and arcade racers. Also own and enjoy GRID and Midnight Club: Los Angeles.

I enjoy sandbox games, and Rockstar in general. Own GTA 3, GTA 4, Red Dead Redemption. Thought RDR was particularly brilliant; I like how Rockstar was able to make a game based on spaghetti Westerns / cowboy movies incredibly fun. =) Playing through Saints Row 2 again currently.

Own the current XCOM, and was a HUGE fan of the old DOS version. Favorite weapon EVAR!! was the guided rocket, where you could set map points for the rocket path. LOVED that.

Fallout 3 was like crack for me. CRACK. Fallout 3 was close to being the perfect sandbox for me.

I also like racing games :) but i didnt liked GT 5.....the Forza series is much better at the moment, you should play it!

I'm very curious about Forza (Forza Horizon, not so much...) However, that'd require me getting a second console.

My wife doesn't appreciate the first console, let alone the idea of me getting a second one. =p I think a second console would make her less than thrilled.

I've only played the first Forza for a wee bit. What time I spent on it *was* enjoyable; if I had the opportunity, I'd give Forza 4 a try.
