Weird, I know some people who played the game on PS5 on the last update and didn't encounter any issue
Anyway, outside of reinstalling the game and clearing the cache, there is not much you can do on console, so if it's not already done, I suggest to directly contact the support for help ("contact us" button)

One more thing you might try if you didn't, it's to switch to a different graphic mode. If the game crashes in quality mode, try to switch in performance mode (or the opposite) in case the crashes are somehow related to a specific graphic mode at a specific moment.

I tried re installing, clearing cache and even factory resetting my console and nothing worked... If i try turning ray tracing on the game crashes immedeately. Utterly un playable
This tells me that it might be a temp issue. Can you feel the air going in and out the PS5 adequately? If not, then I would recommend to bring it to your dealer to have it completely dusted out and examined for hardware errors while you're at it.
