Why does the video start with the creatures health nearly gone?
Here's the full playlist, but some scenes are missing because PS4's share button only records 15 min. of gameplay footage:

So while I'm fighting I'm also pressing the share button. I was also extremely frustrated at this point because he's killed me nine times before this. I was close to killing him twice out of the nine. My tenth try I finally figured out that heavy attacks are more useful in this fight and slayed him with a build I just came up with.

Also I don't know if everyone wants to see the entire gameplay footage. I did make a playlist for it if anyone wants to see most of the fight.

One more thing, you can't mediate during this fight or run away. If you do he gains all of his health back. I tried to see if that would work because I was curious and nope it didn't work. He had all of his health when I came back, I wasted 40 min. bringing his health down to 2/3 left the first time fighting him trying to mediate.

Respec'd for this fight. I'll break down why I chose these skills.
- (Required) Strength Training 5/5. Main attack is heavy. More damage for heavy attacks makes the fight go by a lot quicker. Light attacks do half of the amount of damage heavy attacks do even when upgraded. I used heavy attacks for this fight simple because light attacks where too fast and I'd always hit his wing breaking Quen and exposing myself to unnecessary danger. Where as heavy attacks I can kind of cancel it out by dodging. I use the dodging and heavy attack method a lot during this fight and it works perfectly against his parry / block / counterattack.
- (Required) Resolve 3/5. Helps with damage reduction. It's useful with Undying.
- (Required) Undying 4/5. Undying is the most important skill of all. It's a second wind and it will give Geralt some vitality back when he loses his adrenaline. Just hope he doesn't hit you with bleeding damage. The bleed damage is by far the most dangerous part of this fight other than his bs double attack where he breaks your shield and hits you for direct damage. If you get effected by bleed damage use Quen to cancel it out immediately. Bleed will slowly lower your vitality and if you don't have adequate health Undying will not activate.
- (Required) Cold Blood 1/5. Use this skill mainly for adrenaline gain to keep Geralt alive at a distance, gaining adrenaline will keep Undying active. Fighting him head on at this level is hard, he not only will one hit kill you if you avoid undying but he's also one of the fastest monsters in the game when it comes to attacking. Breaks Quen then pecks at your health. You'll be able to take 2 hits. I've fought a bunch of monsters prior and he's probably the quickest. I could beat him with just these 4 skills alone. These are the mandatory skills that will keep Geralt alive. The others are for additional heavy attack damage and adrenaline gain.
