I think you can buy stuff with Florins in No Man's Land, Orens in some parts of.. I actually dunno where but it would have to be somewhere and Novigradian Crowns everywhere. It's just more convenient if you're travelling loads in particular areas to use Crowns. I really do believe that Florins and Orens are still currency items and not "junk".

Depends on the extent of your credit line.

Value of money could also vary depending on war, for example if Nilfgard win some battle, floren could be stronger than oren, or vice versa.
