Unfortunately, I don't have a Switch 2, so I can't say anything about this version of the game.
Can confirm this issue effects all consoles. PS5 lost the setting with the previous update. It has also been reported numerous times by both ps5 and xbox users since april. That is now two months without the ability to drive for those of uss needing inverted y axis. Please have this as a priority.CDPR support can be reached here:

Just ensure you send in a Support ticket using the link @devivre posted above. The boards are community tech support. Only official tickets go to the REDs.
