Phantom steed, and rigging horse races.

Well with Geralt already being a twice living mutant monster hunting sorcerer assassin. I feel he isn't really bad ass enough, so we should be able to get ourselves an other worldly horse that we can show off by beating local farmers at races, and chunking pumpkins at them.

It might surprise you but it wouldn't really fit Geralt to have a mythical/legendary horse. This may sound silly but lore-wise witchers are pretty low-magic, they don't use long forgotten powerful artifacts and stuff like that... their strongest weapons are their unique abilities (their signs, their elixirs and their bodies) not the actual armor they wear or the swords they use which sometimes very well crafted are still normal armors and swords. Same goes for their mounts. Personally, I'd rather have a rather normal Roach, maybe from a good breed but nothing magical about it

Never liked the protagonist in the Whicher series. Gerald always felt a bit vanilla. Like the same generic knight in dirty armor we've seen all around. Let's spice it up. I want him to consume the Nilfgaardians with fireballs from his eyes, and bolts of lightning from his arse.

I could see Geralt doing this with the help of some spicy food, since foods are edible in Witcher 3. It could become one of the combinations of the Igni sign called the fiery arsehole, make it happen CDPR. And it should be on top of the Igni skill tree, it's only suitable for masters of Igni.
