For me, a lot of it comes from taking waaay too many pics. Eventually you have to hit something that is above your average. I haven't even gotten all of the ones I think are pretty decent out of the folder that they get dropped into. Also spending a lot of time on some of them and others just managing to hit the screenshot button or Print Scrn in time to catch something great. And then there was the thought that popped in: "While I am flying through the air across most of the map from that bike crash..." got me some nice aerial views. That and every game I play I like seeing where I can get to. There are some places that the "barriers" that are supposed to keep you out are less than spectacular in how well they work. For instance:

You can see the balcony (and others) from the previous picture behind V along with the stadium (one of my previous images was shot from it) in Pacifica
EDIT: Apologies, I just realized I didn't post the one from the stadium. It was on my original list but I ran out of slots in the first images I posted. I will post it later.

The other side of things is playing around with the settings in screenshot mode. Consider the following pics: none of them turned out as the best image it could have been, although the last one is close, but I was still learning what I could do with the screenshot mode and hadn't figured out how to get everything in the image in focus yet.

I could have zoomed in a little, had both V and the holo-fishes in focus, and added the light blue filter and gotten a really excellent image out of it. I know that now, but I hadn't messed around with the screenshot process enough then to get an image that I would really be proud of. I will probably go back at some point and try to recreate it as it should have been, but haven't gotten around to it yet. And 650+ hours in-game on multiple playthroughs tends to allow you to learn a lot about screenshots...
Here is another shot where I was just messing around with the screenshot process.
