Gray and white hair are both caused by the loss of pigment-producing cells (melanocytes) that color hair as it emerges. Partial loss produces gray hair; total loss, white. For reasons we don't understand, the hair follicle melanocytes in the scalp are especially sensitive to aging, stress, and insults from autoimmune diseases to poisoning. For other reasons we don't understand, other melanocytes are less sensitive, leading to the "Burt Reynolds Effect".
