We make them the same as they are in the books, but give them new experiences at the same time. A traumatic experience can change character's nature for example, and that's a literary device we sometimes use.

That’s a good question. But if I remember correctly, Fringilla Vigo was also able to read minds, and it was mentioned that she was a quite young sorceress. So I guess (but I could be wrong) It’s not a “you have to be that old to do that-thing”, rather a [special] ability which can be learned and/or improved through practice. I see what you mean. I can't really picture Geralt choosing Triss over Yennefer either. But since there are a number of people who want this, it seems they want to give players the choice.
