Bosses with progressive changing difficulty curves keep them refreshing time after time of fighting them. Each boss should have a set of strengths and weaknesses, some obvious and some that need either learned or investigated prior if possible.
Knowledge of game mechanics and stats should be the priority here, to allow the player to really maximize their effectiveness against bosses. Sure, higher difficulty just prolongs the boss fight but the game would benefit more from increased hard to fight AI patterns and offensive/defensive tactics against the player rather the increased health bars and damage dealt.
