I found that I could change the Witcher's hairstyle just now. A dwarf can change it for coins
I didnt know that until now and I am pretty excited.

Are there more shops like this that I should know about?
How come they are not on the map?
Can they be visible?

As has been answered, there's a hairdresser in every chapter. If you want to know what's in each place without just exploring, there's fairly decent maps here...
