What's that intrument?

The one that features prominently on the soundtrack? Some kind of middle ages string instrument I guess?

Sounds different than a Violin to me, plus there were no Violins in the middle ages so I suppose it's something else.

Not too sure then. It just sounded like the violin that lady played during the video game awards during the DA:I performance. As it was introduced in the early 1500's it's old, not sure when the middle ages were admittedly. Could it be a Viola?

I'd say Viola too. Two or more tracks of them, layered upon each other to create this special kind of sound.

While you can digitally create and alter the sound of any instrument, I know that CDPR collaborated with the band Percival who I think use authentic medieval instruments. My money's on the Byzantine lyra, but I'd like to know for sure.
