I've decided I will buy the collector's edition if I can get my hands on it. Heck I now have paypal and a credit card to (ab)use. Nothing will stand in my way, other than it being sold out within an hour upon pre-ordering. I will get my GOG copy of it too when it get's on sale or if I can get a back up copy for it. I'll cross my fingers.
Basically I don't think it was very fair that steam users got a GOG back up copy. I understand the market strategy, but it feels wrong imo. It was meant so people have a digital back up for if they lose their physical copy or if they accidentially break their disc(s). Which I am all for. However Steam is already a digital platform, so why did they get to get a 2nd copy? It almost feels as if buying from steam was more rewarding than buying it through GOG. It would be funny if they released the witcher 3 a day earlier on GOG just to piss everyone off.

CDPR will not answer if a witcher 3 backup copy could be redeemed on GOG. For obvious reasons. They might, after a year of release. They also might not do it. So you have to weigh that possibility in as well.
