"Adding it" is not hard, but actually making a decent first person mode is a major undertaking on it's own.
NONE of Witcher 3 aspects were ever designed with first person perspective in mind, as mod clearly shows - controls don't apply too well, combat is horrible, many people complained about head bobbing and entire experience doesn't really work anywhere outside peaceful exploration of open spaces.
CDPR would never add an half assed mode so to make it "AAA" they'd have to rework several aspects of the game - a game that's essentially sold, finished and completed. Not to mention entire team is now working on either Gwent or Cyberpunk. I honestly doubt that at any given point in time they'd ever consider working on such thing but now out of all times it's even less plausible than ever.
Best you can get is probably Cyberpunk 2077(eventually) which, if i recall correctly - is going to be a FPP RPG.
