Besides when driving, I have actually found that the missions themselves are a lot more interesting if you turn off the minimap, as it encourage you to explore the area yourself, rather than just following the yellow dots. Also it makes stealth slightly harder as you can't see the viewing cones of enemies either or their exact position.
If you plan on changing how the driving helper works, which you should as you pay way to much attention to the minimap rather than the road, this might not be needed. But if not, I think it would be a cool option if you can make it so the mini map automatically shows when you are driving and hide when you are not.
