Maybe you could add a setting where if you stop, for example - pushing D for turning right and releasing it the turning stop immediately instead of simulating the wheel going back to neutral position meaning the car continue turning for a while after you let go.
What is happening is the car is still turning even though you let go of the button (simply because the wheels are simulated fully), and this is the source of a great many mishaps in traffic, atleast for me. Would be great if we could toggle that feature off, and have what is most common in other games where there is driving.
