One of the RED's answered that in the polish forum. He said there will be a basic Wyvern that going to look just like the one from The Witcher 1, just will be larger. He also confimed another monster: widłogon (sorry, I don't know how it''s called in English):

Bit off topic but did anybody go crazy with the pre-orders? My pre-orders added up to a little over 200 dollars just for the witcher 3. *welp*
